Khodiyar Dairy & Farsan Mart

We have been running Khodiyar Dairy & Farsan Mart here in Katargam Midc for a good while now. Most mornings start pretty early, around five or six, when the milk crates first arrive and we have to get everything stacked in the coolers before the sun gets too high. It is usually a bit chaotic during those hours because everyone is stopping by on their way to work to grab a packet of milk or some fresh curd. We also spend a lot of time in the back getting the farsan ready. The smell of frying snacks usually fills up the whole shop by nine. We make things like gathiya and papdi, and we try to keep the glass counters full, but on busy days, things sell out faster than we can bag them up. The shop is not very big, so it gets crowded quickly, especially on the weekends when families come in to buy snacks in bulk. We have some regular customers from the nearby factories who come in every single day for their tea-time snacks. Sometimes the floor gets a little messy with flour or salt, but that is just how it goes when you are working with food all day long. We just keep our heads down and focus on keeping the fridges humming and the shelves stocked. It is simple work, really, but it keeps us busy from morning until we pull the shutters down late at night.
