Katargam is where we are. Amin Ice Cream is our little place. It’s mostly just big freezers humming all day and night. We have to keep an eye on the temperature all the time because if it drops, we are in trouble. Sometimes the ice builds up on the lids and we have to scrape it off with a plastic tool. It’s cold work, even when it’s boiling hot outside. We handle the tubs and the cones. Most of the kids in the neighborhood know us by now. They come in with their coins after school and stand there deciding for a long time. We try to keep the floor dry but with the melting ice and the drips, it’s always a bit damp near the back sinks. We have some stools but most people just stand and eat outside. The lights are bright so people can see the flavors through the glass. We spend a lot of time washing the scoops and the metal containers. It’s a lot of routine. Sometimes the delivery truck comes late and we have to stay open an extra hour to get everything tucked away in the freezers. We don't have any fancy decorations. Just the menus and the plain white walls. It’s honest work. We like seeing people happy with a cold treat when the sun is beating down. We just keep the machines running and the cabinets full for the next day.
