This location is tucked away in Palam Colony, specifically at Rz-111 B on Street Number 08 in the Kailashpuri Extension. It’s not the kind of place you’d expect to find a big name, but here we are. This isn’t a massive glass-fronted restaurant on a main highway. It’s more of a local operation right in the middle of the neighborhood. The street can be narrow and sometimes there are cows or bikes blocking the way. We work here every day, getting things ready and handling the daily chores of running a food business. It gets hot in the kitchen and the back rooms are often filled with supplies. We don’t spend time on fancy speeches or marketing talk. Most of us are from around here or nearby areas in Delhi. We know the local crowd and the kids who come by after school. The office part of it is small and usually has a stack of receipts and schedules pinned to the wall. It’s a busy atmosphere with a lot of noise from the street coming through the doors. We just focus on the tasks at hand, making sure the orders are right and the place stays clean. It’s honest work in a crowded part of town. Palam Colony has its own rhythm and we’ve just become a part of it over time. We’re just regular people working a job in 110045.
