We are based in the Bengali Club Complex in Port Blair. It is a central part of the town and easy to find for most people living here. We chose to focus on fried chicken because it is something straightforward that people of all ages seem to enjoy. Living and working in the Andamans is a bit different from the mainland. Everything moves a little slower here, including the deliveries of our ingredients by sea. We have a small setup inside the complex with a counter and a few places to wait for your order to be ready. It is not a big restaurant with table service or anything like that. Most people just take their chicken and go back home. The humidity in Port Blair is always very high, so the kitchen area can feel quite heavy and hot throughout the day. We don't have any fancy signs or big corporate branding on our walls. We are just a local shop trying to make a living like everyone else. You can often hear the noise from the rest of the complex while we are working in the back. We use a simple recipe and don't try to overcomplicate things with too many options. Sometimes we have to close early if we run out of stock because getting more supplies can take a while on an island. It is a modest business and we like it that way. We just focus on the fryer and serving whoever stops by.
