Operating out of Karjat in Raigad means we get used to the early morning air. The kitchen gets hot pretty fast once the stoves are on. We are located right here in the 410201 area, which is a bit of a drive for some, but for us, it’s home. The team consists of people who have been around food their whole lives. We don't have some big corporate kitchen with stainless steel everything; it's a real place where stuff gets done. We spend a lot of time sorting out vegetables and making sure the grains are right. Raigad has good produce if you know where to look. Sometimes the deliveries are late because of the roads, and we have to scramble. That’s just life in the catering business. We don't talk much about culinary excellence or anything like that. We just make sure the pots are full and the food tastes like it should. It’s hard work, standing on your feet all day, but when the event is over and the plates are empty, it feels okay. We’ve been doing this from this Karjat address for a bit now. It’s a practical setup. We handle the big vessels, the heavy bags of rice, and the constant cleaning. It’s not a glamorous job, but someone has to do it, and we happen to be the ones here in Raigad doing it every day. We don't have a website or anything fancy, we just cook.
