Nalasopara is always a bit chaotic, and our spot in the BMC colony near Achole Road is right in the middle of it. We are located at Chandresh Hills, using the spaces C-7, 8, and 9. It’s a decent sized area but it feels small once we start the cooking. Making pooris involves a lot of dough and hot oil, so the kitchen area is always a bit greasy and warm. We spend a lot of time talking while we work, which is probably where the name comes from. There’s always someone coming in or going out, and the noise from the street never really stops. We deal with a lot of flour bags and big tins of oil every single day. The floor gets a bit slippery if we aren't careful with the cleaning. It’s a lot of work to keep things moving, especially when the orders start piling up in the afternoon. We don’t have a big marketing team or anyone telling us what to do, just the staff here trying to get the food right. Sometimes the water supply in the colony acts up and we have to manage with what we have stored. It’s just regular life for us here, nothing too polished or fancy. We just keep frying and packing until the day is finally done and we can go home to rest.
