Indigo Delicatessen

Started the day early here at building 153 in Evershinecity. Vasai East can get pretty humid, but once the shutters are up and the fans are going in room 202, it feels like home. This place isn't fancy. It’s just us making sure the food is ready for whoever walks in. I’ve lived around Mumbai most of my life and this little corner of the city has its own rhythm. We spend a lot of time checking the bread and making sure everything is where it should be. Sometimes the delivery trucks are late or the rain makes things slow, but that’s just how it goes here. Most of the people who stop by are regulars from the neighborhood. You get to know what they like to eat without even asking. It’s not about being some big corporate chain. We just focus on what’s in front of us. The counters get cluttered and the noise from the street is always there in the background. If you’re looking for the place, look for the sign near the stairs. It’s a bit of a walk up, but we’re usually around till late. We don't have a big team, just a few of us trying to keep things running. It gets tiring standing all day, but seeing the same faces every afternoon makes it worth it. We try to keep things simple and local. It's just a small shop in a big city doing its thing.
