If you find yourself in Khora Colony, look for us in Azad Vihar. It’s a tight neighborhood with narrow streets and a lot of houses built close together. Our shop is right there on the corner where everyone walks past. We start the stoves early so the snacks are ready by the time people are heading out to work. There’s a lot of steam in the air and the constant sound of bubbling oil. We have these big metal trays that we stack up high on the counter. The shop isn't very big, and it can get a bit smoky if the wind isn't blowing the right way through the door. We have a small bench outside where some of the older men sit and talk for hours. We know almost everyone who lives on this block. Kids come in with a few coins looking for something sweet after their school lets out. We keep the change in an old wooden drawer that sticks sometimes if you pull it too hard. The walls could probably use a fresh coat of paint, but we haven't gotten around to it yet with all the cooking. It’s a busy life in Khora Colony and we are just one part of the daily routine for the folks living in Azad Vihar. We serve what we make and try to keep things moving. It’s just a local spot where people know they can find us every day.
