If you ever find yourself in the Main Market of Phase-2 in Noida, you’ll probably walk right past us. We are Aggarwal Bikaneri Sweets. We start our day when most people are still sleeping. The kitchen in the back gets hot early because the big vats of milk and sugar need time to get going. We don’t use any of those pre-made mixes you find in big factories. Everything is done the way we were taught by our elders. It’s messy work, with flour on the floor and sticky syrup everywhere, but that’s what a real sweet shop is like. We don't have a fancy website or a bunch of slogans. We just put the trays out in the glass counter and wait for the morning crowd. The afternoon is usually a bit slow, so we sit on the stools and talk about the news or the cricket score. Then it picks up again when people are heading home from work. They want something for their kids or for a guest who is visiting. We’ve seen the market change a lot over the years, with new shops opening up and others closing down. We just keep doing what we do. Our counters aren't always perfect, and sometimes the labels are handwritten by one of the boys, but the food is fresh. That’s what matters to the people who live around here. We’ve been here a long time and hope to stay for much longer.
