Galina Bar Be Que is right in Gole Market 6. If you know Connaught Place, you know how hectic it gets around here. We’ve been at this spot for a while now. The walls have some soot on them from the grill, but that's just part of it. We spend most of the afternoon prepping the meat. The knives need sharpening every couple of days. We don't have fancy uniforms or anything like that. Just aprons that get stained by the end of the shift. The smoke from the charcoal fills the air and you can smell it from down the block. Sometimes the traffic in CP is so bad that the delivery guys get stuck for twenty minutes just a few meters away. We sit on the stools out front when it's quiet. Gole Market has a lot of history and we feel like we’re just a small part of that. The tables are a bit wobbly, so we put folded cardboard under the legs to keep them steady. It's not a polished place. We have a radio that plays old songs in the background. Most of the people who come in are regulars who work in the nearby offices. They don't want anything fancy, just a quick meal before they head back to their desks. We just keep the fire going and try to stay out of the heat as much as possible while the orders come in.
