Our place is right on the ground floor of House Number 281 in Block-Wz, over in Naraina Village. It’s a busy little corner of New Delhi. We focus on food, mostly traditional stuff that people around here grew up eating. It’s a family-run kind of thing, so you might see my uncle or my sister helping out depending on the time of day. The kitchen is always going, and it smells like spices almost all the time. We didn't start with much, just a few pots and a lot of patience. Now we have a few more people helping us out, but it’s still the same basic idea. We don't use any fancy machines; most of the work is done by hand because that’s how it tastes better. The street outside can get really crowded with rickshaws and people walking to the market, so deliveries are usually best done early in the morning. We aren't a big factory or anything like that. We are just a local spot in Naraina trying to make food that reminds people of home. Sometimes we run out of things early if the demand is high, and we hate having to tell people no, but we only make so much each day. It’s a lot of hard work and long hours over the stove, but we like it. We hope to stay in this spot for many more years.
