We have this small shop, G 19, inside the Royal Arcade in Navsari. It’s right across from the Morarji Vegetable Market, so the whole area is usually packed with people buying their groceries. You can smell the fresh vegetables and the chaos of the market from our doorstep. We mostly focus on Parsi dishes that we’ve been making for a long time. The kitchen isn't very big, so we have to be organized or we run out of space to move. Every morning starts with chopping onions and getting the spices sorted out. The Royal Arcade is an older building and sometimes the lights in the hallway flicker a bit. We get a mix of people, some who have lived in Viraval forever and others who are just visiting Navsari and want a taste of something local. We don't have a big menu, just the things we know how to cook well. Usually, we are busy packing containers for people to take home for dinner. The counter is a bit scratched up and the chairs are simple, but it works for what we need. When the market across the street closes, things finally start to get a little bit quiet around here. We wash the pots, sweep the floor, and lock up the shutters. It’s a lot of standing and cooking, but we are used to the rhythm of this neighborhood now. We hope the food we make is enough to keep people coming back.
