Marhaba Tawa Fry

Marhaba Tawa Fry is down on the Navsari Gandevi Road in Village Adada. We are a bit away from the main city rush, but the road is usually quite busy with trucks and cars going between Navsari and Gandevi all day. You can hear the sound of the metal spatula scraping the tawa right from the street. We have a very simple setup here, mostly because we keep things practical for a roadside place. The dust from the road sometimes blows in when it's dry, so we spend a lot of time cleaning and wiping down the benches. It’s a local spot where people from the village and tired drivers stop for a quick bite. We start our prep work in the afternoon to get ready for the evening crowd. There is a lot of heat from the big iron pans we use, but you get used to it after a while. The lighting is just enough to see what we are doing once it gets dark. We don’t have a big menu or anything complicated here. We just do what we know how to do on the tawa and serve it up. It’s a family-style environment where most of the locals know each other. Sometimes it gets a bit chaotic when too many people show up at once, but we manage to get the food out eventually. When the sun goes down, the place feels a bit more quiet even with the constant traffic. We stay until the last customer is done and then we pack away.
