If you walk down Bajaj Road you will find us easily enough. Shyam Pan Bhandar is just a small stall but we have been on this street for a long time. The wooden counter is worn down where people lean their elbows while they wait for their pan. I start every morning by sorting through the betel leaves. I look for the ones that are fresh and green, throwing away the torn ones. My fingers are permanently stained a bit orange from the ingredients, but that's part of the job. Bajaj Road is always loud with the sound of horns and people shouting, but I stay focused on the leaf in front of me. I apply the lime and the catechu with a small wooden stick. Every customer has their own way they like it. Some want more supari, some want it sweet with gulkand. I remember most of their preferences without them having to tell me. It’s a small space, barely enough room for me to turn around, but I have everything within reach. There is a small radio in the corner that plays old songs to keep me company when the street goes quiet in the middle of the afternoon. We don't have a big menu or anything. It's just pan. People stop their bikes, get their fix, and move on. It is a humble way to earn a living but it keeps me busy enough for the day.
