Our spot is located in Fort, right near the Fountain area. If you know Mumbai, you know how packed this part of town gets. The buildings here have so much history, and our place is tucked into one of those older structures. It has high ceilings, but the kitchen area is actually quite compact. We spend a lot of time prepping everything and making sure the storage is organized. The walk-in cooler is where most of the action happens because we have to keep everything at the right temperature. Working at Fort Fountain means you see a lot of different people every day, from office workers to tourists just walking around. The traffic outside is constant, and you can always hear the horns honking. We have a small crew here, and we all know each other's habits by now. Sometimes the delivery entrance gets blocked by a parked truck, and we have to go out and ask them to move so we can get our supplies in. It's just a part of the daily grind in this neighborhood. We don't have a big fancy sign, just the name on the door. It’s a bit of a maze inside the building, but we’ve got our system down. We just keep our heads down and focus on the food we are preparing. It’s a solid place to work, even if it gets a bit chaotic during the lunch rush hours.
