We are over here in Lower Parel at Shop No 53. Most days start pretty early because the bananas come in fresh and we have to get the oil going. The heat from the big pans fills up the space fast. You can find us on Dadasaheb Khamgar, which is usually a bit noisy with all the traffic outside. We spend a lot of time just slicing and frying. It is not fancy work, but it keeps us busy. People come by after work to grab a bag of wafers or some farsan for their tea. Sometimes the shop gets a bit cramped when several customers show up at once. We have been in this spot for a while now. The floors need a good scrub every night because of all the oil. It is just a regular local mart where we try to keep the containers full. We see the same faces every week, mostly folks who live nearby or work in the offices around here. Dealing with the sacks of ingredients can be heavy on the back. We don't have a big team, just a few of us making sure everything is stacked right on the shelves. The salt and spice get in your clothes by the end of the shift. It is just how it is working in a snack shop. We mostly just focus on getting the chips thin and crispy so they don't sit on the shelf too long.
