Happy Vegetarian

Our place is in the food court at Phoenix Marketcity in Kurla West, specifically at S-17 in the 2nd Stage of the Bda Layout area near 11th Main. Being in a mall is quite different from being on a regular street because the lights are always on and there are no windows to the outside. We get there before the mall opens to start prepping the vegetables and getting the kitchen ready. Once the doors open, it’s a constant stream of people walking past. Some are just looking and others are hungry shoppers. The food court is always noisy with the sound of many people talking and the trays clinking. We spend most of the shift standing in a small space, making sure the food is ready and the counter is clean. It can get very hectic on Saturday and Sunday when the whole mall is packed with families. We don’t have much time to talk during those hours. During the weekdays, it’s a bit slower, so we spend time checking the inventory and talking with the staff from the other stalls. We have to follow a lot of mall rules about when we can bring in supplies and how we handle the trash. It’s a lot of routine work, but it keeps us busy. The air conditioning is nice, but you do miss the fresh air after being inside the mall for ten hours straight.
