Greko

Our place, Greko, is on Mangesh Shenoy Street, and we’ve been here for a while now. It’s not a huge shop, just a regular storefront where we handle the daily cooking. We mostly deal with the lunch and dinner crowds that walk past this part of the street. Inside, it’s usually pretty warm because the kitchen is right there and the ventilation isn't perfect, but we make it work. We spend the mornings prepping ingredients, chopping things up and making sure the supplies arrived okay. The street outside can get quite busy with traffic and people rushing to work, so we see a lot of different faces through the window. We don't use any fancy systems, just a pad of paper for orders and a clock on the wall that’s always five minutes fast. Most of the people who come in are regulars from the offices nearby. They usually know what they want before they even sit down. We try to keep the floors swept, but with people coming in and out all day, it’s a losing battle until closing time. It’s just a plain, honest spot to get some food without any fuss. The sign outside is a bit faded from the sun, but everyone knows we are here. Sometimes we run out of things early if the day is busier than we expected, which happens more than you’d think. We just clean up and get ready for the next day.
