Deepu Sandwich is based in Dahisar. It is a small operation, mostly just a counter where we assemble everything. We have piles of bread loaves delivered every morning and we spend a lot of time slicing cucumbers, tomatoes, and boiled potatoes. Dahisar is a residential area, so we see a lot of families and kids coming by in the evenings. The space is quite tight, so we have to stay very organized to make sure we don't trip over each other. We use a small toaster that has been with us for years and it still works just fine. There isn't really a place for people to sit inside, so most customers just stand around on the pavement while they wait for their food. It can get a bit dusty when the wind picks up, but that is just part of being on the street. We don't use any complicated recipes, just the basic stuff that people grew up eating. Sometimes we have a long line and people get a bit impatient, so we have to work as fast as our hands will allow. The knives need sharpening pretty often because we go through so many vegetables in a single shift. We keep an eye on the vegetable prices since they change every week. It is a humble little shop and we are just happy to be a part of the daily life here in Dahisar, serving sandwiches to whoever passes by.
