We start early here on Ambedkar Road. The sun isn't even fully up when we get the shutters open. Itt Bhatti stays busy all day, so we have to stay ready with the stock. Most folks know us around Goregaon East by now. We just handle the meat, clean the heavy wood counters, and wait for the morning crowd to trickle in. It’s a small space, nothing fancy at all. We spend a lot of time chopping and making sure everything looks right on the hooks. Sometimes the knife needs sharpening two or three times a day because of how much we do. My hands are usually cold from the ice buckets. People come in asking for specific cuts for their dinners, and we do what we can. Sometimes they just want to chat for a bit while we wrap things up in the thick brown paper. The fan in the corner makes a bit of a clicking sound that we’ve just gotten used to over the years. We’ve been here a while now. The street gets really dusty in the afternoons, especially with all the traffic passing through toward the station. We just keep the door open and keep working through the heat. There isn't much to say other than we're here every day except maybe some holidays. If you're walking down towards the end of the road, you'll see our sign. It’s just us doing what we know every single day.
