Our office is actually inside the Hotel Ambalakkara Regency, up on the third floor. It’s at Building No. VIII/470-1 in the Pulamon area of Kottarakkara. It’s a bit different from a standalone shop because we are right there in the hotel building. We focus on food and beverage concepts, which means we spend a lot of time thinking about menus and how things should be served. It’s more of an office-style job compared to a warehouse, but it still feels like a local operation. We can see the road from the windows, and it’s always busy with traffic. We don't have hundreds of employees, just a small group of us working on these ideas. Sometimes we go downstairs to the hotel to see how things are going. It’s a convenient spot for meetings, though we don't do anything too formal. The space is a bit cramped with all the papers and samples we have lying around, but it works for us. We’ve been here in Kollam for a while, and we like being part of the local scene. It’s not always easy to come up with new food ideas, and some days we just sit there staring at the walls. But eventually, something clicks. We are just regular people trying to figure out what works in the food world without making it too complicated.
