We are located on the ground floor at 83 S. P. Mukherjee Road in Kolkata. This is where we make our fermented drinks. It’s not a high-tech facility with robots; it’s just a small space where we do almost everything by hand. We spend a lot of our time washing glass bottles, checking on our cultures, and making sure everything is fermenting the way it should. The air often smells a bit vinegary or fruity, which is just part of the job. We aren't a massive drink company with a fleet of trucks. It is just a few of us who decided to turn something we like into a business. It involves a lot of heavy lifting and getting our hands wet. The neighborhood is very lively, and being on the ground floor means we get to see everything happening on the street. Our setup is pretty basic. We have some sturdy tables, lots of jars, and a small area where we handle the paperwork. We don't have any big marketing plans or polished speeches about our brand. We just focus on the bottles and the process. Sometimes things don't go exactly as planned, and we have to start a batch over, but that is how you learn. We are just regular people trying to do something simple here in the city. It’s a lot of work, but it keeps us busy and we like that.
