Dosa Com

Madhur Complex is where we are. It’s in Vallabh Vidyanagar. Anand is a busy place, especially around Mota Bazar. We are near Bhai Kaka Circle. Dosa Com is the name on the board outside. We spend a lot of time at the tawa. The heat from the burners is always there. Students come by from the colleges nearby. They are usually in a hurry. We try to keep up but sometimes the orders pile up. The address is 388120. It's an old building, but it stays cool enough in the shade. We go through a lot of oil and butter. Cleaning up at night takes a long time. We have to scrub everything down so it's ready for the next morning. Sometimes the delivery guys are waiting outside and the street gets crowded. It's a lot of noise from the bikes. We don't have a lot of space for people to sit, but they make it work. Most people know where the circle is, so finding us isn't too hard. We just do the work every day. There isn't much to say other than we are here in the complex. The morning starts with soaking the grains. If we forget that, we are in trouble for the next day. It’s just a routine we have now after all this time. We are just regular people making food for whoever comes through Mota Bazar looking for a meal. The complex gets quiet late at night after we finally lock the shutters.
