Indian Air Force

This is the catering section, No 77 Su, part of the Indian Air Force setup. We operate through the 56 APO system, so mail takes its own time to get here. Sgt Dalip Kumar is usually the one keeping things running in this corner. It’s a busy spot because everyone has to eat, right? We aren't a restaurant or anything like that. It’s a kitchen and a mess area where things stay pretty loud during the peak hours. The pots and pans are always clanging. We go through a lot of supplies every week. Being part of the military side of things means we have a schedule that doesn’t really stop. You wake up early to get the tea going and then it’s just one meal after another until the lights go out. It’s not glamorous work. There’s a lot of peeling vegetables and making sure the stoves are working right. The air gets hot in the kitchen, especially in the summer months. We just stay focused on the tasks. It’s about getting the food ready for the guys. We don't have fancy menus or anything. Just solid, honest meals that keep everyone going. If you’re looking for us, we’re back in the catering block. It’s a bit out of the way, but we like it that way because it gives us room to work without too many people walking through. The floor is usually a bit damp from cleaning, and there's always the smell of spices in the air.
