Down in the Sodala Anaj Ka Mandi, you’ll find Shri Gayatri Masala Laghu Udyog. As the name suggests, we are a small-scale unit focusing on masalas. The air around our place always smells like turmeric, chili, and coriander, which is something you get used to after a couple of days. We spend our time cleaning, grinding, and packing spices. It’s a "Laghu Udyog," so it’s not a giant factory by any means. It’s mostly just a few of us working with the grinders and making sure the spice mixes aren't sitting around for too long. We sell to the local vendors and some people who come directly to the mandi to get their supplies. The floor is usually a bit messy with spice dust, no matter how much we sweep it. We don't have any polished sales pitches or fancy packaging with bright colors. We just put the stuff in clear bags and get it out the door. It’s hard work because the heat from the machines and the spices can be a bit much during the summer months. But we’ve been doing this in Sodala for a while and we know the regulars. We don't try to compete with the big national brands; we just focus on our small corner of the market. It’s a steady life, and we take pride in the fact that our spices end up in so many local kitchens. It’s just what we do here every day. We hope it stays that way.
