We've been running Ghotwal Masala on Sikar Road for quite a while now. The shop is at number 28 in Jamdoli. Most days it’s just us here, dealing with bags of whole spices that come in from the market. It gets pretty dusty inside when the grinders are going, and the smell of chilies can make you sneeze if you aren’t used to it. We don’t have a fancy office or anything like that. It is just a workspace where we sort things out and pack them into smaller bags for people who live nearby. My hands usually smell like turmeric or coriander by the end of the day. It’s hard work and the fans don’t always keep the heat away, but it’s what we do. Sometimes the machinery breaks down and we have to spend the afternoon fixing a belt or cleaning out a jam. We aren't trying to be some huge brand you see on TV. We just supply the local kitchens around this part of town. People know where to find us if they need a kilo of something for their pantry. The shop is a bit cluttered with crates and weigh scales, but we know where everything is. If you walk past on a windy day, you can probably smell the garam masala from down the street. It’s a simple life here on Sikar Road, just keeping the stock moving and making sure the jars are full.
