Ofen has been a part of Road No. 10 in Banjara Hills for quite a while now. If you walk past number 49, you can usually smell the bread baking. We get here pretty early in the morning when it is still dark outside to start the dough. The kitchen isn't fancy, just some big mixers and a few ovens that have seen better days but still work just fine. We have a few tables where people can sit down, though it gets a bit crowded during the lunch hour when everyone from the nearby offices comes in. The staff is mostly local people who have been with us for a long time. We don't spend much time on fancy decorations or big signs. Most of our day is spent cleaning flour off the floors or making sure the coffee machine is topped up. Banjara Hills is a busy area, so there is always noise from the street, but inside it feels a bit quieter. We just focus on getting the orders right and making sure the shelves aren't empty by mid-afternoon. It’s a simple business, really. We make things, sell them, and then start all over again the next morning. Sometimes we run out of things earlier than expected, but that is just how it goes when you’re a small local bakery.
