Zaffran is just a spot over here in Dlf City Sikandarpur 108 where we spend most of our day around the stoves. The kitchen gets really hot by noon, especially when the tandoor is running full blast. We mostly just focus on getting the marinades right and making sure the meat is tender enough before the lunch rush starts. It is not a fancy operation or anything like that. The floor usually has a bit of flour on it by the time evening rolls around because the guys are busy making roomali rotis. Sikandarpur is always moving, so there is constant noise outside the door from the traffic and people walking by. Some days the delivery guys are late and it gets a bit hectic, but we manage.
