Working out of Shop Number 1 in Nsez Phase 2 is a busy life. We are right opposite Plot Number 33, near Park Corner, so we see a lot of office workers every single day. This part of Noida is all about the morning rush and the lunch hour. We start early, usually before the sun is fully up, to get everything ready. It’s a small kitchen, and we focus mostly on takeaway and quick meals. We don't have a seating area where you can linger for hours. People usually just grab their lunch boxes and head back to their desks. The menu changes a bit depending on what we find at the market, but we keep it simple. It gets very hot in the shop during the peak hours with all the stoves running. We aren't trying to be a fancy restaurant with a big menu. We just want to make sure the food is cooked properly and people aren't waiting too long. There’s a lot of noise from the nearby construction and the traffic in the 201305 area. We just keep our heads down and keep cooking. My cousin helps with the deliveries around the phase 2 area. It’s just a small family business trying to keep up with the pace of the industrial zone. We don't have a big corporate office; our office is just the counter where we take the cash.
