Chandni Chowk is a loud place. Shop 1862 is right on the main road, not far from the old Ghantawala spot. It's always noisy with the rickshaws and people pushing past each other. We spend most of our time just managing the line and making sure the food gets out. There’s no quiet moment here from morning until we close. The kitchen is small and it gets hot, especially during the summer months when the humidity hits Delhi. We’ve seen the shops around us change hands many times, but we’re still here in the same spot. People find us because of the location mostly. You can hear the traffic and the shouting from the street while you eat. It’s not a place for a fancy dinner, just a spot to grab something heavy and move on. We deal with all kinds of customers, from tourists who look a bit lost to locals who have been eating in Chandni Chowk for decades. Sometimes the supply of ingredients is late because the trucks can’t get through the narrow lanes, so we just work with what we have. It is a bit of a struggle keeping the place tidy with so much foot traffic, but we do our best with a broom and a wet cloth every couple of hours. That is just how life is in this part of town.
