Kitchen Ninten

Being on the 3rd floor of Vardhman Star Mall puts us in a specific kind of spot. We are right there at Sector 19, which is quite close to Badkal Chowk. You can see the traffic and the people moving around below. Kitchen Ninten isn't some huge corporate place; it’s just us working in the mall environment. Most days start with us getting the supplies up the service elevator, which can be a wait sometimes. Once we are in the kitchen, it’s all about the prep. We spend hours chopping and stirring before the first customer even shows up. The mall gets a mix of shoppers and people just passing through. We get a bit of a rush during the lunch hour and then again in the evening. It’s a different vibe than a street-side shop because of the air conditioning and the mall security, but the work inside the kitchen is still the same old story. Heat, steam, and making sure the plates look decent. We’ve been here long enough that we know the other shop owners on this floor. We talk about the foot traffic and the weather. It’s a steady routine. We stay until the mall starts closing up and the lights dim down. Then we clean up and do it all again the next morning. It is a lot of repetitive work, but we have our system down now. Sometimes the mall is quiet, and other times it’s completely packed.
