Harish Amritsari Naan

If you walk past the community center in Sector 21c of Faridabad, you will find Harish Amritsari Naan. We are a small operation and most of what we do involves standing near the hot tandoor all day. The smell of burning coal and baking dough is always around us. Faridabad can get very cold in the winter, and that is when we are busiest because everyone wants something hot. In the summer, it’s a bit of a struggle to stay cool while working the ovens. We don't have much of a seating area, so you will often see people standing around on the pavement in the 121001 area eating their food. There is usually flour on our clothes and the floor because we are constantly rolling out dough. We don't have a big staff, just a few of us making sure the naans don't get burnt. The neighborhood is fairly quiet compared to the main roads, but we get plenty of locals coming over from the nearby houses. We don’t do any fancy packaging, just some foil and paper to wrap things up. Running a small food stall like this means we are always worrying about the price of gas and flour. It’s just a basic shop where we try to keep the tandoor at the right temperature and serve the people who live in Sector 21c.
