Bikanervala

Bikanervala is located in Faridabad City Sector 20A, right on National Highway 2 along the Mathura Road. It is a very large space and it stays busy from the moment we open the doors. Because we are on the highway, there are always cars and buses pulling into the lot. The security guards have a tough job keeping the parking organized. Inside, the noise level is always high because of all the families and travelers talking at once. We have long rows of counters and many different sections for different types of food. The staff is always moving, refilling water pitchers and clearing away the heavy trays that people leave on the tables. The floors are made of hard tile that we have to scrub every single night because of the thousands of people walking on them. Sector 20A is a hub of activity and being near the National Highway means we never really have a slow season. We see people who are in a huge hurry to get back on the road and others who want to sit for a long time. The kitchen is a massive operation behind the scenes with a lot of clattering and shouting to get orders out. We don't do much in the way of talking to customers, we just keep the lines moving and the food coming out. It is a constant cycle of cleaning and serving in a very big, echoey building.
