Being in Ernakulam, things are always moving fast and the streets are crowded, but our little corner on Vignesh Andi Achari Road is where we keep things steady. As Indo French Shellfish, we deal with exactly what the name says. It involves a lot of coordination between different places and people. We are an LLP, which is just a way of saying we are a small partnership of people working together to make things happen. The office is tucked away and isn't much to look at from the outside, but inside we are always busy with something. There is a lot of talking to suppliers and checking on the latest catches from the coast. Shellfish is a tricky business because you have to be very careful with the timing and the temperature. We spend most of our day on the phone or looking at spreadsheets to make sure everything is okay. It isn't the most exciting work to talk about, but it keeps us busy and the bills paid. We like being in Paravana because it feels like a real part of the city, not some fake business district for show. We have a few desks, some chairs that have seen better days, and a lot of focus on our daily tasks. We just get it done.
