Our shop is in Lakshmi Nagar, specifically Gurunanak pura A 92. It’s a bakery, so the first thing you notice when you walk in is the smell of vanilla and yeast. We start baking very early, long before the shops around us even open their shutters. I handle the oven mostly, making sure the sponges for the cakes come out soft. We do a lot of birthday cakes, so there’s always someone coming in to check on an order or to ask for a specific color of frosting. It’s a small shop, and the back is filled with flour bags and mixing bowls. Sometimes I get flour on my clothes and forget to wipe it off before talking to a customer. We sell pastries, cookies, and sometimes fresh bread if we have time to bake it. The display case has to be cleaned every hour because kids like to put their hands on the glass while looking at the chocolate eclairs. It’s a busy street, so we get a lot of foot traffic from people going to the metro. We don’t do anything too fancy, just honest baking with ingredients we trust. It’s a lot of washing dishes and cleaning trays at the end of the day, but it’s worth it when the shop smells like fresh cake in the afternoon. We just stay focused on the timers and the frosting bags all day.
