We are tucked away over at A-84 in Jagatpuri. Most people in this part of New Delhi know where we are because they’ve walked past us a hundred times on their way somewhere else. The kitchen gets pretty hot, especially in the peak of summer, but we’re used to it by now. It’s mostly just a group of us who know each other’s rhythms well. One person handles the orders, another is back there with the food, and someone is always cleaning a table or the floor. We don't use a lot of big words to describe what we do here. It’s just making food and handing it over to hungry people. Some afternoons are quiet and we just sit and wait for the evening rush to start, while other times it feels like everyone in Jagatpuri decided to show up at once. We’ve had some of the same equipment for ages, and it works just fine for what we need. You see the same delivery bikes coming and going all day long. It's a lot of routine, really. We make sure the ingredients are fresh and the counters aren't sticky. It’s a simple way to spend a day. We don't try to be anything we aren't. If you're around 110051, you'll see our sign. We just keep the lights on and keep the ovens going until it's time to lock up and head home to our own families at night. It's just the way things go around here.
