Our kitchen is based at Palaneer House, which is over in Meenakaliya near the Panambur area. It is a good spot for us because we are close to the water and the breeze helps a lot when all the stoves are running at once. We have been cooking for people around here for a very long time. Mostly it is just big batches of rice, sambar, and other local dishes that families want for their private functions. We do not have a big front office or anything like that for visitors. It is mostly just us in the back with the big steel pots and the crates of vegetables. Early mornings are always the busiest time for the crew. We start well before the sun comes up to get everything chopped and ready for the fires. Sometimes the delivery van gets stuck in the traffic near the port, but we usually manage to get there. It is a lot of heat and steam in the kitchen, but we are all used to it by now. People just call us up when they have a wedding or a small prayer meet at their home. We do not do anything too fancy, just the kind of food people actually like to eat. We grew up around Panambur so we know what tastes right for the local people. Palaneer House is where all the hard work happens every day. We just keep cooking and packing the food.
