Vijayvargiya Caterers

We are located over at B 4-182 in the Pawanpuri area of Bikaner. It is a quiet residential part of town, but our kitchen stays pretty busy most days. You can usually smell what we are cooking from the end of the street. We have got big stainless steel pots and stoves that take up most of the back room. The front area is where we keep the ledgers and take notes on what needs to be bought from the market. In the mornings, there is a lot of chopping and washing going on. We get our supplies from the local vendors nearby. The heat in Bikaner can be tough, especially when the burners are all going at once. We have got a couple of big fans, but they mostly just move the warm air around. The floors are stone and we try to keep them as clean as we can, though there is always a bit of flour or spice dust somewhere. It is not a big corporate operation. It is just a few of us making sure everything tastes right. We do not have a fancy storefront with glass windows. It is more of a workspace where the real work happens. Sometimes neighbors pop in just to see what we are making for lunch. We like it here in Pawanpuri because it feels like home and everyone knows where the 182 house is located. We spend long hours here, but we just get on with it.
