Masala Dani Hotel The Paul

You can find us over in Domlur Layout, specifically at Chimnya Ganpati Chowk 139/28. We are part of The Paul, and Masala Dani is where we handle the food side of things. It is an interesting spot because Domlur is always moving. We have people coming in for all sorts of reasons—some are staying at the hotel and others just live nearby. The kitchen stays pretty warm throughout the day. We prepare things in batches. It is not a huge space, but we make it work. Sometimes the supply truck is late and we have to scramble, but that is just part of the job. We do not use any fancy descriptions for what we do. It is just cooking. The lighting inside is a bit soft, which helps when the sun is too bright outside. We have got some regulars who have been coming since we opened. They usually sit in the same spots. We try to keep the tables wiped down and the water glasses full. It gets a bit hectic around 8 PM, so the noise levels go up then. We do not have a big marketing department or anything.
