You can find us right on Cottonpet Main Road at number 37. If you know this area, you know how loud and crowded it gets with all the shops and carts nearby. The building is older, and the ceiling is quite high, which helps when it gets hot in the afternoons. We have those heavy metal shutters that we pull up every morning at dawn. The kitchen is right in the back, so you can hear the pans clanking and the water running all day long. We use those sturdy stainless steel tables that are easy to wipe down. Most of the time, the floor has a few damp spots because we are constantly cleaning up spills. We don't really do much decor, just a few calendars on the walls and a clock that’s five minutes fast. The staff has been here for years, and we all know where everything is kept without even looking. Lunchtime is when it gets really wild, with people shouting orders and the smell of steam everywhere. After that, we usually take turns sitting on the back bench for a short break. It’s a busy life on this road, but we’re used to the noise by now. We just focus on keeping the food moving and the dishes washed. It's a lot of work but we have a good system going on that keeps the place running from morning to night.
