Hotel Biryani Zone

We have been running Hotel Biryani Zone for quite a while now in Whitefield. The address is Whitefield 41397, right where the road gets narrow and the traffic starts to build up. It started as a small setup with just two big pots. Now we have four. The mornings are always the same for us. We start around five when it is still dark outside. My brother handles the rice while I look after the meat and the spices. We don’t use any of those pre-packaged mixes you find in stores. It is all ground by hand in the back room. The smell is very strong and it lingers in the air all day. Sometimes we get a bit of smoke in the seating area because the chimney is old and needs a good cleaning. The tables are those heavy wooden ones that don't move easily. They have a few scratches from years of use. It gets very loud around lunch. People from the nearby offices come in all at once. It is a bit of a scramble to get everyone their plates on time. We don't have fancy uniforms or anything like that. Just us in our aprons. Whitefield 41397 is a busy place, and there is always dust from the construction down the road. We try to keep the front clean but it is a losing battle most days. We just want people to eat and feel full. Some days the salt is a bit much, or the rice is a bit soft, but we do our best with what we have and keep the fire going.
