Al-Hyatt

Al-Hyatt is located on the 80 Feet Road in Koramangala, specifically in the Subbaiah Palya area. It’s a lively part of town, and there’s always something happening right outside our front door. We have a big grill that stays hot most of the day because that’s what we use for most of our cooking. You can usually smell the smoke and the spices from a block away. We’ve got a small team in the kitchen who have been working together for a long time. It’s a tight space, but we’ve learned how to move around each other without getting in the way. The seating area is basic, just enough for people to sit down and have their meal. We see a lot of students and young professionals who live in the nearby apartments. It gets especially busy late at night when other places start to close up. We keep the lights on and the skewers turning. Sometimes the supply truck is late, and we have to scramble to get everything ready on time. We don’t put on any airs here. It’s just a place to get some food and go about your day. We handle everything ourselves, from cleaning the tables to buying the ingredients from the market every morning. It’s a lot of work, but we like the pace of it. This street never really sleeps, and neither do we most nights.
