If you find yourself in Amritsar near the Golden Temple, you’ve probably walked right past us in the Katra Ahluwalia market. It is one of those places that is always packed with people, and the noise from the street never really stops. We are right there on the Golden Temple road, which is a very busy spot to be. Our shop is small and we’ve been here for quite some time. We don't have fancy menus or soft chairs. People usually just stand around or find a quick spot to eat while they are shopping or on their way to pray. It gets very hot in the summer with the stoves going, but we just keep at it. Amritsar is known for its food, and we are just one small part of that tradition. We make things the way we’ve always made them, without changing much over the years. You can hear the sounds of the market all day long, from the rickshaws to the shopkeepers calling out. We don't spend money on advertising; people just find us because they’re in the neighborhood. It’s a humble place, and we like it that way. We just focus on keeping the food coming out fresh for everyone who stops by. It’s a lot of long hours and the floor can get a bit messy during the rush, but being in such a holy and historic part of the city is special to us.
