Our operation is based out of units 28, 29, and 30 in Jalaram Estate. We are right by the Sarkhej Sanand Railway Crossing in Sarkhej. It’s an industrial sort of area, so it’s not very quiet, but it gives us the space we need. Having three units joined together means we have room for the big stoves and all the catering equipment. The sound of the trains passing by is something we hear all day long. We deal with a lot of food and hospitality work, so the mornings start well before the sun comes up. There is a lot of heavy lifting, moving crates of vegetables and big containers of water. The floor is concrete and stays cool even when the weather is hot outside. We have a routine of cleaning everything down every single evening. It’s a lot of work to manage the staff and make sure the logistics for the next day are sorted out. We don’t have fancy furniture in our office area; it’s mostly just shelves and stacks of paperwork. The estate gets a bit muddy when it rains, so we are always wiping our boots. We just focus on getting the food prepared and the service ready for whatever event we are handling. It is a busy, noisy, and productive place to be. We stay late most nights making sure the inventory is right for the next morning. It is just part of the job.
