Our place is at E 57 Deshwali Society on Chandlodia Road. We are quite close to Umiya Hall, so we see a lot of people passing by for events there. Being in Chandlodia, it is a bit away from the main city rush, but it stays busy in its own way. We handle catering, which means our kitchen is usually a mess of big pots, pans, and bags of vegetables. There is always someone chopping something or checking a stove. We are not one of those high-end luxury services you see on TV. We are just local people who cook for weddings, small parties, or neighborhood gatherings. My cousins and I do most of the heavy lifting ourselves. We have a couple of big stoves and some folding tables we use for prep work. The space in the society is decent, but when we have a big order, it feels very small very quickly. We do not use fancy uniforms; we just wear what is comfortable for working over a hot fire all day long. Sometimes we have to stay up late to get everything ready for an early morning function. It is hard on the back and the feet, but the work is steady. We just try to make sure the food tastes like it should and that there is enough for everyone who shows up.
