We have been at Shop No 28 in Sardar Centre for a while now. If you know the area near Nehru Park, you probably passed us at some point. It gets really crowded around Vastrapur Lake, especially in the evenings when everyone is out for a walk or a bit of fresh air. We mostly spend our time in the kitchen making parathas. It’s a small place, nothing fancy at all. Sometimes it gets a bit smoky when the griddles are hot and we have several orders going at once. People just stop by when they are hungry after being at the park. We keep some stools outside for people to sit on. It is not the quietest spot because of the traffic on the main road, but that is just how Vastrapur is. We deal with a lot of different orders every day. Some people like a lot of butter, while others want their food plain. We just try to get the food out fast so nobody is waiting too long on the sidewalk. My brother and I run the show here. We started this because we wanted a spot where people could get a filling meal without spending a lot of money. The menu is simple. We do not have those big leather folders, just a printed sheet or sometimes we just tell people what we have left for the day. It is a lot of work, standing by the stove for hours, but it keeps us busy. (255 words)
