We operate out of Hotel Amar on Fatehabad Road. It’s a well-known street in this part of the city, and being inside the hotel means we see a lot of travelers. We’ve been here for a good number of years now. The space has a bit of an older feel to it, which we haven't changed much. We focus on the food and making sure the plates are full. The kitchen can get quite hot in the summers, but that is part of the job. Our staff wears simple uniforms and they know the menu by heart. We don’t use a computer for everything; sometimes we still write orders down on a pad. It’s a bit old-fashioned but it works for us. Guests from the hotel come in for their meals, but we also get local people who have been eating here for a long time. The tables are sturdy wood and the chairs are comfortable enough for a long dinner. We don't have any background music, just the sound of people talking and the kitchen in the back. Fatehabad Road is always busy with tourists and traffic, so it’s nice to have a steady place like this. We just keep doing what we know how to do, day in and day out, without making a big fuss about it. It’s a job we enjoy, even when it gets stressful during the holiday seasons when the street is packed.
