If you go to Nangloi and look for Shop Number 1 on Najafgarh Road, that is where you will find us. We deal in dairy, mostly paneer, and our day starts way before the sun is even up. The milk trucks arrive early, and we have to get everything processed and ready for the morning rush. People in this part of Delhi take their food seriously, so if the paneer isn't fresh, they will let you know right away. The shop floor is usually a bit wet from the cleaning we do to keep things hygienic. It smells like fresh milk and cream in here all day long. We have large steel containers and refrigerators that hum loudly in the background. It is a simple business, but it requires a lot of physical work, lifting heavy cans and cutting blocks of paneer all day. We don't have any fancy seating; people just come to the counter, tell us how much they want, and we wrap it up for them in plastic bags. On the weekends, it gets especially hectic because everyone is making special meals at home. Najafgarh Road is always congested, so we see a lot of cars and bikes stopping quickly to pick up their supplies before moving on. We’ve been here at this shop for years, and we’ve seen the area change quite a bit, but the way we make our product hasn't changed much at all. We just focus on getting the daily stock out.
