We are located at 75-9-21 in Dwarka Nagar, specifically the Seetamma Peta area. This is where we make our masalas. It’s a busy neighborhood. Our building isn't very large, so we have to be smart about how we use the floor space. We have grinders that run for most of the morning. They make a lot of noise, but the neighbors are used to it by now. The air inside is always a bit spicy, it makes you sneeze if you aren't careful. We mix different powders together to make the blends people use for their curries. It’s a lot of measuring and pouring. We use big stainless steel bins to hold the different ingredients. I’ve been doing this for a long time, so I can usually tell if a mix is right just by the color. We don't have any high-tech lab. We just rely on our eyes and our noses. Sometimes the supply of chili is too hot, and we have to adjust the whole batch by adding more of the other stuff. It’s a bit of a puzzle sometimes. We sell to the local shops and sometimes directly to people who walk in. The counter is right at the front near the door. We have a small scale that we’ve had for a decade. It still works fine. We don't spend money on fancy packaging. We just use plain bags with a simple label. It’s about what’s inside, really. We keep the machines clean and the doors open.
