We've been at the Waghodia GIDC for a while now, specifically at plots 127 and 123. Hing is one of those things you either know about or you don't, but for us, it's what we do every single day. Working in an industrial area like this means there's always something going on with deliveries or getting the machines sorted. It gets pretty dusty out here sometimes, but that’s just part of the job. Most of the people working here are locals from around Vadodara or the nearby villages. We don't really do fancy stuff. We just focus on getting the hing right because people around here rely on it for their cooking. It’s a strong smell that stays with you even after you go home, which my family reminds me of often. We started out small and just kept at it. There isn't much to see at the facility other than the stocks and the packing area. We try to keep things moving so the supply doesn't stop. It’s hard work, especially in the heat we get in Gujarat, but we’re used to it. The GIDC has its own rhythm and we’ve become a part of that over the years. We aren't trying to change the world, just making sure the spice is ready when someone needs it for their kitchen. The road leading to our plot is often busy with trucks, and you can hear the noise from the nearby factories all day long. We have a small office tucked in the corner of the warehouse where we handle the billing and talk to the drivers. It’s not fancy at all, just some desks and a lot of registers. We’ve been here for years, so we know the security guards and the tea stall guys by their first names. It’s that kind of place. It’s a simple business really, just sticking to what we know and staying busy.
